Wild Food Recipe: Steamed Milkweed Buds

Milkweed (Asclepias syriaca) buds and unripe seed pods are the only palatable parts of this plant.

The buds open quickly, so harvest the tiniest ones immediately.

Steamed Milkweed Buds

1. Trim all leaves and stems from buds.
2. Rinse buds in cold water.
3. Bring water to a boil and immerse buds.
4. Boil for one minute. Drain and discard water.
5. Repeat this process until the buds are not bitter. (I only needed one change of water.)

The buds have the texture of broccoli. I’ve eaten them warm and cold. They are tasty plain, and really delicious with olive oil, sesame oil, or salad dressing.
